Need Fennel/Anise recipes!!

Had an oops ! Moment at the grocery store and picked up fresh fennel instead of leeks. I literally have no idea what to do with it and don't want it to go to waste. Any tips /recipes would be awesome! Thank you.

If you cook it it has more of a celery taste. Raw it is more licorice tasting. Fennel Apple Slaw is delicious! I recently made a Shrimp Soup that had Chorizo, Fennel and Tomatoes also delicious. Rachael Ray cooks with it a lot too. I bet her website would have a bunch of recipes.

We make this recipe every now & then. It's fantastic as a side with steaks...similar to caramelized onions, so tasty!

*It smells super strong when it's roasted, don't be put off. It's delicious and the flavor is far more mellow.

Use the bulb instead of bell peppers in spaghetti sauce. Sautee the bulb with onions, garlic and a green and pour over pasta.

If you make your own veggie stock,the fronds and woody stalks from the top of the fennel make a great base (especially when combined with the green parts from the top of leeks and carrot ends)
