Meat Loaf w/ veggies in it?

For those of you who have made meat loaf with veggies in it, what do you do? Do you just add the veggies to the meat loaf mix before baking?
I tried looking it up and kept getting results for vegetarian meat loaf (which is not what I want...I still want the meat involved! lol).

Yes you just add what you want to it...I use carrots, green pepper and jalapenos...oh and onions. Just dice them all up small or shred(whatever suits you)...add them in and bake like you normally would. I absolutely love veggies in my meatloaf. You can also use ground turkey to reduce the fat. I usually use half ground turkey anf half lean ground beef. Good Luck! Hope you like it!0

I just fold in green beans and corn into my meat/bread crumb mix and throw it in the oven. Of course you can use any veggie you'd like.0

When I make meatloaf, I add diced tomatoes, onions, and bell peppers, along with the spices, egg, and some ground up oatmeal to help hold everything together. You just mix it all up in a big bowl, then put it in the loaf/casserole pan to bake. Yum!0

Yes, you just add the veggies into the mix. You can get away with using a little less meat that way, if you want, but if you just want to add them to the full recipe, keep in mind that it will change the texture and you *might* need to add more water or an extra egg to make sure it's not too dry. You might not need to, but it's something to keep in mind. I add the veggies before adding the oats/bread crumbs/crackers so I can control the moisture better and I don't have to add anything extra.
And not that you asked, but I've found that carrots, celery and onions work best, as well as baby spinach. If you chop them up finely, you can't even tell they're in there. Tastes great, and good nutrition too!0 -
i love shredded zucchini, shredded carrotts and of course diced onions in meatloaf. We like to do half turkey, half beef also. And yup just mix it all together and bake )0

I make mine by using only 1/2 lb of beef 96% lean
i add cooked cauliflower, carrots,spinach and fresh
tomato. Bake as normal.0 -
