PB Protein Cookies (with picture)

1/2 cup coconut oil, softened
1/2 cup peanut butter
1/2 cup stevia
1/4 cup egg whites
1 tsp vanilla extract
1/3 cup water
2/3 cup all purpose flour
1 cup protein powder (I used plant based vanilla orgain)
1 tsp baking soda
1/2 tsp salt
Preheat oven to 350 F.
In a large bowl, mix softened coconut oil, peanut butter, and stevia.
Then slowly add the egg whites, then stir in the vanilla and water.
Add the flour, protein powder, baking soda, and salt. Mix.
Drop onto a nonstick sprayed cookie sheet.
Bake for 12 minutes.
I came out to having 15 cookies. They are 141 calories each and have 13C 11F 6P
They're super soft but kind of have a cake texture.
They taste great too and not too sweet!

I changed my recipe and made them even healthier!
1/4 cup coconut oil, softened
1 cup powdered peanut butter (add some water to get pb texture)
1/3 cup stevia
3/4 cup egg whites
1 tsp vanilla extract
1/4 cup all purpose flour (I used bobs mill gluten free all purpose)
1 cup protein powder (I used viva vanilla vega protein smoothie)
1 tsp baking soda
1/2 tsp salt

Then slowly add the egg whites, then stir in the vanilla and water.

This time I came out to 12 cookies
Each cookie has 111 calories - 13.7 carbs, 5.8 fat, 9.7 protein
