Recipe logging when frying

Hey all;
In the quest of being honest and logging everything when creating recipes how do you all log oil you have fried with.
For example I made turkey meatballs, i fried them in oil but not all oil was soaked up by the meatballs as I sealed them and finished in the oven.
What do you all suggest with this type of scenario?

I count all the oil, even the oil that doesn't get soaked up. I reckon this will make up for times when I may be accidently under-logging.0

I add about 2tbsp of oil per serving.0

Measure the oil before frying and measure the oil remaining after frying.0

When you fry stuff they usually get around double the calories then what they would have without frying.
I don't fry a lot, but that's how I calculate it when I do. I rather overestimate than underestimate.
The more precise way is to weight your oil before, and after and calculate the difference, to see how much exactly oil was soaked up.0 -
Some great answers here, thanks for your help.
This will help especially with the fried egg0
