I eat lots of cauliflower "rice" and mashed cauliflower. You can make shepherds pie with ground meat and veggies topped with mashed cauliflower or sweet potatoes. I also like making souvlaki by marinating cubed meat in a mix of lemon juice, olive oil and oregano and then grilling or baking it on skewers.
