You may have better feedback if you're a bit more specific. Is there a certain type of meal (soup, stew, stir fry), ethnicity? Asian, Thai, Mexican? Or a specific ingredient you want to explore? Lentils, tempeh, soy, sweet potato?0

I must have posted this link to these spinach quinoa cakes a hundred times on this site, but I can't help it. This is one of my favorite recipes and it fits so many categories including quick, healthy, high in protein and vegetarian. I make these often and eat for breakfast lunch and dinner. I like with egg, tomato and avocado.

soups can be a great low cal and veggie friendly meal. I'm currently liking a lemon lentil soup out of the thug kitchen cookbook (all great vegan recipes, FYI). If you shy away from carb heavy meals (like pastas, sandwiches, etc.), it can be easier to get the calories lower. Carbs are great, but it can be easy to overdo them on a vegetarian diet if you aren't careful.0

This is a great soup...I use this basic recipe but end up crushing the feta, adding more peppers and making a bit thicker with more quinoa or powdered mashed potato. My wife prefers using white quinoa, but I prefer the red and will often add in some amaranth as well.
