I love the cooking show Good Eats. Recently I saw an episode on making your own energy/protein bars.

This is what I use:
Protein powder (chocolate) 6 scoops
1 cup rolled oats (plus a litte extra 100g total)
1/4 cup cocoa powder
Mix these dry ing together. In separate bowl mix:
5 oz milk (I use 2%)
2 TBS honey
3 TBS peanut butter
Mix wet and dry ing together and press in a wax paper lined 8x8 pan(sprinkle a few oats on bottom and top). put in freezer until set up firm, cut into 8 bars. I keep mine frozen so they don't go bad and it's like having a little frozen treat.
They are about 215 cal 7g fat 23g protein (depending on you own ing of course)

Here are some of Jamie Eason's protein bars for those of you that find it easier to just copy from here instead of the site. (Thought I'd be helpful. Haha!)
Btw, I make my own oat flour by putting old fashioned oats in the food processer and then sifting it a little afterwards. Oat flour goes rancid faster than regular flower so it's cheaper and lasts longer to use old fashioned oats and just make it yourself.
Chocolate Protein Bars
Calories: 96
Fat: 1.4 grams
Carbs: 12 grams
Protein: 10 grams
Makes 16 squares, serving size=2 bars.
Ingredients:
1 cup Oat Flour
4 Egg Whites
2 scoops Vanilla Whey Protein Powder
½ cup Splenda, Truvia, or Ideal
½ tsp Baking Soda
¼ tsp Salt
8oz Berry flavored Baby Food
3 tbsp Baking Cocoa
4oz Water
Directions:
1. Preheat oven to 350 degrees.
2. Mix dry ingredients (oat flower, vanilla whey protein, baking soda, salt, baking cocoa) together in a large bowl.
3. Mix wet ingredients (egg whites, Splenda, Truvia, or Ideal, Berry flavored Baby Food,Water) together in a medium sized bowl.
4. Add wet ingredients to dry ingredients and mix together.
5. Spray cooking dish with a non stick butter spray and add batter to dish.
6. Bake 20-30 minutes in oven.
Lemon Protein Bars (My fave!)
Calories: 86
Fat: 1 gram
Carbs: 10 grams
Protein: 9 grams
Makes 16 squares, 2 squares per serving.
Ingredients:
• 1 cup oat flour
• 2 scoops vanilla whey protein
• 1/4 tsp salt
• 1/2 tsp baking soda
• 2 qt mix Crystal Light (preferably without aspartame)
• 4 egg whites
• 1/2 cup Splenda, Truvia, or Ideal
• 8 oz baby food applesauce
• 4 oz water
Directions:
1. Preheat oven to 350 degrees.
2. Mix oat flour, vanilla whey protein, salt, baking soda and crystal light, in large bowl.
3. Mix egg whites, Splenda, Truvia, or Ideal, applesauce and water in a bowl.
4. Add wet ingredients to dry ingredients and mix together.
5. Spray 8x8 glass pyrex dish with non-stick butter spray.
6. Pour ingredients into dish.
7. Bake 23 minutes.
Carrot Cake Protein Bars
Calories: 94
Fats: 1.25 grams
Carbs: 10 grams
Protein: 10 grams
Makes 16 squares, 2 squares per serving.
Ingredients:
• 1 cup oat flour
• 2 scoops vanilla whey protein
• 2 tsp cinnamon
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1/8 tsp allspice
• 1/8 tsp nutmeg
• 4 egg whites
• 3/4 cup Splenda, Truvia, or Ideal
• 8 oz baby food carrots
• 4 oz water
Directions:
1. Preheat oven to 350 degrees.
2. Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
3. Mix egg whites, Splenda, Truvia, or Ideal, baby food carrots and water (optional) in a bowl.
4. Add wet ingredients to dry ingredients and mix together.
5. Spray glass pyrex dish with non-stick butter spray.
6. Pour ingredients into dish.
7. Bake 20-30 minutes.

These are the ones I use and my fam loves them... it is a basic protein bar and then you add what ever fruits and nuts to fit your tastes... I also used flax seed meal for half of the eggs (follow directions on box for that, but remember you are only using the egg whites so you might want to cut back on the water) If you think they are too moist add a bit more oatmeal. YUM!
I double the following recipe to make a 9x13 pan
Ingredients:
1cup oats
2 scoops protien powder (I use optimum nutrition)
(I also added 1scoop baking coco because I didnt use chocolate protien powder)
4 egg whites
1 banana mashed or 1/2 cup applesauce
1/4 tsp vannilla
1TBS natural peanut butter ( I used what I had in the fridge... not natural)
Stevia or other sweetner to taste (about 4 packets)
dash of salt
Mix-ins of your choice : carob chips, choc chips, dark choc chunks, dried cherries, dried cranberries, coconut, cashews, peanuts, sunflower seeds, .... anything you can think of
( I used mini semis sweet choc chips, dried cherries, coconut, and cashew pieces)
1. Preheat over to 350 Degrees F and spray an 8x8 baking pan with cooking spray
2. combine dry ingredients and set aside. In a seperate bowl, combine egg whites, mashed banana, vanilla, and peanut butter. Blend well. Pour the wet into the dry and mix well by hand.
3. Pour mixture into pan and bake for 20 minutes or until the edges start to seperate from pan or the tooth pick comes out clean.
4. let cool completely before cutting
5. ENJOY!
