I have to do all my meal prepping on the weekend. It's a lot easier said than done but so worth it! One of my favorites is stir fry - quick and easy with tons of veggies. I also am making more wraps now. Sometimes I need a break from salads. I just grill some chicken, bell peppers, onion and seasonings. I put all that in a wrap with avocado, salsa and lettuce. I typically boil a dozed eggs on Sundays to have hard boiled eggs through the week too and I load them with Tapatio.0

I have been doing meal prep for 2 weeks and LOVE this Southwest Turkey Stuffed Peppers recipe for lunch http://www.peanutbutterandfitness.com/2014/08/southwest-turkey-stuffed-peppers-and.html . I use brown rice instead of quinoa. They reheat wonderfully and moist because the peppers basically steam in the chicken broth and then release the broth again when you reheat it. I cut up the peppers into small pieces after reheating and mix it with the stuffing and it's a HUGE amount of food. So good!0
