I am vegetarian and looking for some easy to make veggie salad/lunch recipes that I can make the night before and take to work. Any ideas?

I made "Tofuna" salad a few weeks ago. I baked the tofu and then shredded it up, added in mayo, pickles, and celery... It was fantastic with crackers!0

Do you have a microwave at work? Then it's easiest to just make an extra portion for dinner and bring that to work for lunch.
For salads you don't really need a recipe. Just throw your favourite veggies together. Falafel wraps are always good.0 -
Anything with avocado!! I'm addicted!
Finely chopped lettuce, tomatoes, fresh basil leaves and avocado with a multi-seeded pitta. You could have a yogurt and a item of fruit to have after0 -

I love added roasted chickpeas and hemp seed to my salad!! I make bbq roasted chickpeas then have some of that with spinach, tomato, apple0

Bbq roasted chickpeas sounds delicious. Beans/chickpeas is such a great source of fibre and protein!! Must try it as a snack0

I make a tofu "eggless" salad, sort of like egg salad. Take a block of tofu and steam or cut it up and bake it, but not until it's dry. Crumble it, and add chopped celery, onion, vegan mayo. Basically use whatever you would use to make a regular egg salad, but use crumbled tofu instead. Enjoy!0

If you do eat eggs, I love boiled eggs on my salads. Adds protein and fills you up more, plus it tastes great. Also shredded cheddar cheese.
I don't personally like it more than every once in a while, but I've seen a lot of salads with nuts and fruits like strawberries, oranges, apples (cubed up small), or grapes.0 -
Yes definitely eat eggs!! Just the whites though as cholesterol on the higher side for some reason. These all sound like good recipes can't wait to try them all out! Much appreciated0

I'm a vegetarian too and lunches can be difficult. Morningstar has sone good options but be careful if all the sodium. Love the tofu ideas here!0

My standby is a veggie patty (or several) I bake the night before. Sometimes marinated tofu, either home made or just bought. Add spinach, courgette noodles, sun dried tomatoes, carrots, whatever other veggies I have on hand. Maybe chickpeas or chopped baked sweet potato. Whatever. Make a maple-lemon-tahini sauce which is roughly equal parts tahini, lemon juice, and maple. Done!
I also like making a big bowl of lentils, brown rice, various veggies like above, and some pesto mixed through it (either basil or sun dried tomato flavour). Top with some nutritional yeast, which has a lot of B vitamins.0 -

Same. I love avocado With humous or egg or with cottage cheese & pitta & lots of salad. Can't go wrong0 -
Rinse chickpeas and smash them with Veganaise. Add chopped carrots, celery, and onion. Put on bread with lettuce and sliced tomato. It's my favorite.0
