Taco Soup???

Does anyone have a good (healthy of course) taco soup recipe? I would prefer chicken or turkey but am just looking for a tasty one that isn't too high in the calories, sodium.

    This one is super easy cause of the crock-pot and also super yummy! i put the chicken in the pot raw and it shreds easier

    *Taco Soup*

    1 ½ # hamburger
    1 medium onion diced
    Brown onion & hamburger in a Dutch Oven and drain.

    Combine all of the following without draining any cans:
    1 Can Hominy
    1 Can Diced Tomatoes
    1 Can Great Northern Beans
    1 Can Light Red Kidney Beans
    1 Can Pinto Beans
    1 Can Ro-Tel

    1 Packet Hidden Valley Ranch Dressing Mix
    1 Packet Taco Seasoning
    1 Can of Water

    Serve with:
    Tostitos Tortilla Chips
    Shredded Cheese
    Sour Cream
    Chopped Green Onion Tops

    Hamburger or whatever meat you like and however much you like.
    2 cans kidney beans
    3 cans tomato sauce
    1 pkg seasoning
    3 T brown sugar
    corn (optional)
    1 can diced tomatoes (optional)

    Original recipe called for Campbells Tomato soup and a can of vegetable soup.

    Serve with cheese and tortilla chips.

    we make it vegetarian style (use button mushrooms instead of meat) and throw a can of cheap beer into it.

    mine includes leftover salsa or roasted peppers, jalapenos (if available) and extra cumin. you top this with (a small amount of) frito's corn chips, sour cream and cheese. the fat in the toppings is pretty much the only real fat in the soup, but don't go crazy or it ruins it.

    8 corn tortillas, halved and thinly sliced
    Canola or olive oil cooking spray
    1 tablespoon canola oil
    3 Anaheim or poblano peppers, diced (or bell peps)
    1 medium onion, diced
    1 teaspoon ground cumin
    1 pound boneless, skinless chicken thighs, trimmed and cut into 1-inch pieces (see Tip)
    4 cups reduced-sodium chicken broth
    1 14-ounce can diced tomatoes with green chiles
    2 tablespoons lime juice
    1/2 cup shredded sharp Cheddar cheese (or low fat any cheese)
    1/4 cup chopped fresh cilantro

    Preparation
    Preheat oven to 400°F.
    Spread tortilla strips in an even layer on a baking sheet and coat with cooking spray. Bake until browned and crispy, 12 to 15 minutes.
    Meanwhile, heat oil in a large saucepan over medium heat. Add peppers and onion and cook, stirring, until the onion begins to soften, 3 to 5 minutes. Add cumin and cook, stirring, for 1 minute. Add chicken, broth, tomatoes and their juice. Bring to a boil, reduce heat and simmer until the chicken is cooked through, 12 to 15 minutes. Remove from the heat and stir in lime juice. Serve each portion topped with some of the baked tortilla strips, Cheddar and cilantro.
    Tips & Notes
    Tip: To trim boneless, skinless chicken thighs, we like to use kitchen shears to snip the fat away from the meat.

    Yeah I just throw it all in there and then right before i eat it I take the chicken out and shred it and put it back in. Its so good!

    It is already in the database for food! So you do not need to enter it in just search "Taco Soup," if you make it.

    My dad just recently made a taco soup (but it turned out more like taco chili which was AMAZING). Anyways, I'll have to get back to you on this one. I'm not sure what the calories or sodium is like because I was sick that day and off my diet (since I hadn't eaten anything for the previous three days). I'm sure it couldn't be too bad; the worst thing in it was the extra lean ground beef, and we all know that's not bad at all. :) And, I'm sure you could find lower-sodium/lower-calorie versions of any of the other ingredients.

    I'll post it tomorrow! I won't forget... Or at least I'll REALLY, REALLY try not to.

    You know what? I actually think this IS the recipe my dad made. :\ Hmm, weird. Lol. If you go with this one, don't forget the light sour cream and baked tortilla chips. It's 110% better with them.

    my taco soup is super quick and easy

    brown a pound of ground turkey(or which ever meat you choose)
    add the meat
    1 large can of tomato sauce (28ozs)
    1/2 can of water
    1 taco packet
    1 can of drained black beans
    1 cup of frozen corn
    cook on stove top for 30 minutes on low
    if you need more kick i season with chili powered salt onion powder and a little garlic to taste
    serve with a little cheddar cheese and a dollop of fat free sour cream

    sorry the formating is wierd. first number is carbs, then fat, then protein.

    Here are the directions:
    in large soup pot, brown ground turkey and onion; drain off excess fat (you shouldn't have much with lean turkey). Stir in tomatoes, beans, corn and taco seasoning. Simmer for 1/2 hour, uncovered. Serve topped with corn chips, grated cheese, and sour cream.

    Yum! I need to go buy the ingredients for this. It's a great winter food. I usually portion out 1 C servings and freeze them. When I want to eat, I thaw it in the bag, then dump it in a bowl, add a little water if it is too thick, and warm it up. It is so fast, easy, and delicious.

    Crockpot Chicken Taco Stew

    Approx. 14 one cup servings

    1 onion, chopped
    1 19 oz can black beans
    1 19 oz can kidney beans
    1 19 oz can corn (drained)
    1 8 oz can tomato sauce
    2 19 oz cans diced tomatoes
    1 small can green chopped green chilies
    1 1.25 packet taco seasoning
    3-4 boneless skinless chicken breasts

    Mix everything together in a slow cooker except the chicken. Lay chicken on
    top and cover. Cook on low for 6-8 hours
    or on high for 3-4 hours. 30 mins before serving remove chicken and shred.
    Return chicken to slow cooker and stir in.

    Serve with cheese, sour cream, tortilla chips, pita or lettuce leaves.

    I think I actually got this recipe from this website...I saved it on a word doc on my laptop. This soup is very good. I use FF Cheddar cheese, and low fat sour cream to top....oh and don't forget the cilantro!
