I have been craving oatmeal muffins like a mad woman for weeks. Every recipe I have tried comes out sticky and weird. I've tried Greek yogurt recipes and egg white recipes. I just want yummy muffins minus all the added sugar. I don't like eatin sugar sooo that's my big set back. I can bake sugary goodies no problem. But I'm really struggling on consistency/taste.

Have you ever tried Kodak pancake mix? They have great muffin recipes on the box and website and they are great! They are a banana muffin and reminds me of banana bread. There are 2 jobs though so if you want the one with extra protein make sure it says protein pancakes on the box.

I made these recently, and they tasted like Brown sugar oatmeal:

If I make them again, I'd put some oats on top, or some streusel for texture.

I make oat bran muffins which are fantastic. I only use a couple of tablespoons of brown sugar plus some applesauce for sweetening. I freeze them then take two out when I need a quick breakfast or one for a snack. I can post the recipe to,or row if you're interested ( recipe is at work!!)

Are you trying to bake with no sugar at all? And no substitute? Sugar in baking is not only for the taste, it also affects texture, so you might be trying to accomplish something that is impossible.
