I've been mashing up a wedge of Laughing Cow Garlic and Herb Cheese into my veggies lately. It's really good...because plain old steamed vegetables can be boring and tiresome after a while. Plus - only 35 Calories!

    Good idea!

    Monday & Tuesday
Lunch: lentil, bean and corn chilli
Dinner: veggie shawarma pan fried with bell pepper, green beans and baby potatoes

    Wednesday & Thursday
Lunch: couscous salad with roasted veggies and hummus
Dinner: seitan masala with pilau rice and green peas

    Friday & Saturday
Lunch: pesto pasta with spinach and slow roasted tomatoes
Dinner: cashew fried rice with sweet-sour cucumber salad

    Sunday
    Leftover day

Breakfast is always a large fruit smoothie of whatever fruit I fancy that day and a protein shake.

I live on my own, so I always just eat the same for two days in a row to save time and not waste too much food.

    I'm having a skinnytaste week:

    Tonight, burrito bowls
Tues: free for all (cause I go to the gym after work)
    Weds: salmon, brown rice, vegx2
    Thurs: leftovers (again, gym late)
    Friday: taco soup

Very bean heavy, I am now noticing... Wonder how that will work out.

I've been on a broccoli slaw kick for lunch lately. The broccoli slaw mix has been cheap at my local grocery!

    Fave combos include:

taco salad style: 170 g of slaw mix, 130 g canned black beans, and a can of drained rotel tomatoes.

Asian satay style: 170 g slaw mix, 12 g Pb2 dry peanut butter; 1 tbsp Swad Ginger & Garlic paste, 1 tbsp ponzu sauce.

Tonight Meatless Monday: Mexican mess, I make Mexican rice, pinto beans, refried black beans, cheese and all other toppings and the family gets to decide how to build their dinner

Tuesday: salmon with baked potato and spaghetti squash

Wednesday: black pepper chicken with red peppers, its like an Asian flavor, served over brown rice

    Thursday: taco soup

Fend for yourself Friday, its the only day I work late and dont get home until 9pm. I usually eat a salad from a restaurant.

I'm not much for meal plannings; it's basically whatever I can pull from the freezer and hope like hell it thaws within an hour.

I always have eggs, some type of non dairy milk for protein shakes, bagged salad, assorted veggies in various stages of ripeness/rotness, mystery meat, etc.

In all seriousness though, I'll probably make meatless chili, pasta, a veggie and cheese tray night.
