GF Spinach, Cheese and Tomato Pancake

A Nice Green Gluten Free Pancake!
These are great Hott or Cold. if they are Hott. Serve with Sour Cream or Mock Sour Cream if you're trying to watch your weight.
When they are Cold they are great to use in place of bread

3 Cups Spinach
3 Eggs (I use Egg Whites)
2/3 Cup Ground Flax Seed
1/2 Cup Tomato - Diced
1/4 Tsp Nutmeg and Black pepper
2 oz Cheese - Shredded ( I used Aged Orange Cheddar)



Directions

Preheat a medium sized pan on Medium Heat
Put the Eggs and Spinach in a blender.Blend til smooth
Pour into a bowl and stir in the remaining ingredients.
If a bit thin add a bit more Flax or if to Thick add a shot of Water.
Pour a ladle full into your pan. When it starts to Bubble on the top.
Flip. When Cooked through
Serve Hot.

makes 6-8 cakes.

    It only makes 6 to 8 pancakes.
    But I live alone so it works out great for me. I use them as bread mostly. so 2 pieces per sandwich. so 3 days of sanwich goodness except I can't eat these at work because people are weirded out by the color.
    Saying they are spinach and gluten free makes them ask more questions. Drives me nuts. yes I'm not a gluten free person but I do try to eat healthier and my sister is gluten free so I try recipes that i can make for her as well

    Thanks, I sent this to my mom, who eats GF. But I have to ask, 2/3 of what? for the ground flax seed?

    It's about 125 per cake... Bit high But Flax is high in Calories.
    If You don't add Cheese it's makes it i about 95. But they are so Yummy.

    OH and Each Cake has 9 Grams of Protein.

    Oh it's 2/3 Cup. I'll correct the recipe. Didn't notice i forgot the Cup piece
