Have been eating on cowboy soup this week and I think it's a pretty easy, healthy, crock pot meal. What are your thoughts?
2 lbs lean ground turkey
1 can corn
2 can black beans
1 can pinto beans
2 small cans rotel
1 can tomato sauce
1 green bell pepper
1 red bell pepper
5 stalks of celery, chopped
1 packet of taco seasoning
salt and pepper
8 cups of water
crock pot on low for 6 hours. (it makes a big pot of about 10 meals)
i'm not sure the calorie counts, but i'm estimating a bowl serving (16 oz) is around 350-400 calories and i'm not hungry after i eat it.
Do you think my calorie count is accurate? They don't have anything like this in the database that i could find, but i think it would be similar to turkey chili (without the flour or corn starch added)

Use the recipe builder and you won't need to just guess at calories and you'll have a better picture if it fits your goals or not. Sounds pretty yummy.0

Are the black beans and corn drained ? This Sounds good, Im thinking salt is gonna be high. You could purchase reduced sod black beans and use frozen bag corn instead of can and use reduced sod taco seasoning this would drop the salt a bit. I have meineres disease and too much salt for me is bad.0

Put the ingredients individually in the recipe builder so you can get the calories.0

Hm. That actually fits pretty well into my calorie goal/the amount I like to eat for dinner. May have to whip out the crock pot.0

That sounded high so I did the same. I got 415 too but a lot of the ingredients were wrong like it has ground chuck and like 12t. of taco seasoning. When I fixed the errors it was down to 285 calories per serving, assuming 10 servings.
I make a similar soup from an old WW recipe but usually omit the meat, or toss in some diced, grilled chicken breast at the end. It has hominy instead of corn and ranch dressing mix in addition to taco seasoning.0 -

I do a crockpot chicken chilli which I got from the Caveman Keto website www.cavemanketo.com/chicken-chili-soup/
Ingredients
• 2 Tablespoons Unsalted Butter
• 1 Onion (250g)
• 1 Pepper
• 8 Boneless Chicken Thighs (~55 Oz)
• 8 Slices of Bacon
• 1 Tablespoon Thyme
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 Tablespoon Minced Garlic
• 1 Tablespoon Coconut Flour (I use all-purpose flour instead)
• 3 Tablespoons Lemon Juice
• 1 Cup Chicken Stock
• ¼ Cup Unsweetened Coconut Milk
• 3 Tablespoons Tomato Paste
Instructions
1. Plate pat of butter on the center of the crockpot
2. Thinly slice onions and peppers and evenly distribute them over the bottom of the crockpot
3. Cover with boneless chicken thighs
4. Cut up 8 slices of bacon and distribute over the chicken
5. Add seasonings (salt, pepper, garlic, coconut flour)
6. Add liquids (lemon juice, chicken stock, coconut milk) and tomato paste
7. Cook on low for 6 hours
8. Stir and breakup chicken before serving
I've not put it into the recipe builder yet, but the website says its 396 calories for a 300g serving. You could omit the bacon if you want to reduce the calorie count slightly. But hey, it's bacon, and everything's better with bacon.

I have. We can't eat beans in my house so I usually use zucchini as a sub in all of my chilis.

This Canadian had to google Ro-Tel. Got it now. Sounds very good. I'd start with dry beans, preparing them the night ahead, but that's me.

Ro-tels are pretty spicy. You might want to taste a spoonful before adding two cans. I like spicy and with 2 lbs. of turkey it's probably fine for most but just a heads up.0

Yep, last hour or so on high or last two hours or so on low is fine. If you like them more crunchy, adjust.0 -

Someone else mentioned ranch seasoning and I forgot I added about half a packet of ranch powder seasoning too
