I am at complete loss on what to have for dinner tonight. I need to keep it low carb.

I also have my little goddaughter staying the summer with me and she invited anotehr little girl to sleep over so it needs to be kid friendly or at least something I can turn into kid friendly.

Any ideas?!?!

I don't know how low carb, but you can make nachos with hamburger or ground turkey, cheese, lettuce, a litttle sour cream or guac, some salsa and use pork rinds for your chips and give the kids the real chips.

I'll make fish and brocolli and green beans for me tonight - and the kids will have a hotdog or hamburger with mac and cheese lol - if they don't like the fish that is ;)

Depends on the kids - fish can be very kid friendly assuming they'll eat it though lol

Low carb and kid friendly..phew that's a toughie! Maybe some chicken (or chicken nugget type) some veggies and some yogurt and fruit for dessert??

    That's the best I've got!!

We eat this all the time: (taco seasoned meat) the kids can have burritos/tacos and a taco salad w/o chips for yourself....

We are having Pork Carnitas with fresh corn salsa. I don't eat the tortillas. I just eat mine with a little bit of cheese. I have weird kids though, they love veggies and fruit but aren't huge meat eaters. Not sure where they get that from though.

Must be Mexican night. We are have chicken enchiladas. I make two batches. one with peppers, onions and chilis for adults. one plain for picky kids.

    We are having -

    Chicken salad -
    - 4-5 chicken breasts, boiled (our however you want to cook them up)
    - sweet pickle relish
    - fat free mayo
    - salt and pepper to taste

    - cut chicken up and stir in ff mayo and relish. That's it! I don't have exact measurements yet, I will do that tonight. Otherwise, just use enough mayo and relish to your liking and go from there. I'll put it through the recipe builder to break down the calories and such.

We are also having baby carrots with roasted garlic hummus and probably some slice apples.
