Sucker for alfredo? I AM! Try this!
I got the idea from a post on here and I tried my own variation! It was great!
3/4 C whole wheat pasta
Apx 3/4 C skim/fat free milk (I didn't measure)
4 wedges Laughing Cow light garlic & herb cheese
1/2 Zuccini thinly shaved with a vegetable peeler (I used a cheese slicer) - you can use any veggie you want!
Freshly ground black pepper
Boil the pasta, add the shaved zuccini for a few minutes to soften it. While the pasta is cooking, simmer the cheese and milk until it is smooth. Add the softened zuccini and black pepper. Yum!

Sounds good. I will have to try it. Classico now makes a Light Creamy Alfredo sauce that is very good.0

I saw it on the shelf when Safeway had their BOGO sale, but it wasn't much different from the original I thought. But I bet it's tasty!0

Also, I just bought the Classico Light Alfredo and it's waayyyy good. I love alfredo so much.
AND I have made this recipe from Allrecipes - it's more involved than yours, but still quite delicious, and the beans make it a great source of protein and fiber! http://allrecipes.com/recipe/vegetarian-white-bean-alfredo-with-linguine/detail.aspx0 -

Yum, might try that later this week I am chowing down on my new Garlic prawn recipe at the moment
200g Prawn Meat
1 cup of Low Fat milk
Galic
Cornflour to thicken
Turmeric to colour
Just put your cup of milk in the frying pan on low heat add garlic and turmeric (just a little bit) heat till its warm, not boiling (dont let it boil) put cornflour in a little cup/bowl add a pinch of water to make a paste and add to milk mixture. Stir till sauce thickens.
Meanwhile boil salted water add prawns for 3 mins (till floating and coloured)
Add prawns to milk mixture a heat through...Yummo!0 -
