I am looking for new meal prep ideas. I am still pretty new at it and would love to hear what other people are doing!

I like shredded slow cooker chicken, brown rice an a veggie! Usually steam bag green beans! But I cook enough to weigh each portion out then put in containers for the week! 2 per day can mix up with few different veggies, cauliflower rice instead of brown rice, sweet potatoes whatever else you can dream up! But once you have it all weighed out save it to your meals for future reference an quickly add to your diary. Plus slow cooker is throw an go for the day, poblano pepper chicken with the Adobe sauce, or just good ol red hot are my go to guys super easy

I meal prep almost every week - usually on Sunday. Here's a few of my regulars:
- Either a large beef or pork roast in the slow cooker. I'll switch that up with baked chicken breasts. I use the meat for different meals throughout the week. Just add rice and veggies, or use the meat for tacos, or to put on a salad.
- Egg and veggie scramble or a fritatta. I make enough for several days and either eat it alone or with a tortilla.
- Steel cut oats with craisins, apples, pecans (or whatever I have). Cook overnight in the slow cooker. This keeps well for days.
- Quinoa cooked for a side dish or make a quinoa tabouli salad.
- "Refrigerator soup" - If I have a bunch of small amounts of veggies and meat I'll make a big pot of soup. Basically, everything savory goes into the soup.
- Chili or beans or split pea soup in the slow cooker.

I like to meal prep on Sundays too. A roast chicken for Sunday dinner, left overs for various meals or lunches. Cook the beef for stew and prep some carrots so when I come home a start the stew back on the stove with the veggies and just have to cube some potatoes. Even make mac and cheese make the sauce and cook the macaroni keep them separated and mix right before cooking. I like to make my cheese sauce with cooked butternut squash very tasty and full of fiber0
