Craving Quesadillas

Anyone have a simple low calories recipe they'd like to share to make quesadillas...

I make a lazy snack version with a tortilla folded over, a small amount of tomato puree, jalapeños and about 25 grams of cheese, toasted on a grill. It ends up being about 350 calories, it's not exactly authentic but it satisfies the craving!1

I use low carb tortillas.. they're 60 to 80 calories. My favorite is just with refried beans, cheddar cheese, and salsa. Easy to fit in my day too. I just cook it in the toaster oven, as it was too messy in a pan.1

Corn tortillas which are about 50 cals each... and cheese. I use pepper jack cheese. I just use about an ounce per quesadilla. Just heat it up on the pan, no oil or anything, flip, let the cheese keep melting... serve on a plate and eat.1

I use the Santa Fe tortillas from Sam's Club and take a boatload of various veggies....bell pepper, spinach, mushrooms, jalapenos, etc. Whatever you want...I saute the veggies first, then use about 1/2 of shredded cheese. Grill and enjoy!1

See if you can find Ole Xtreme Wellness High Fiber Low Carb (the 50 calorie one vs the 90)..I get mine at Wal*Mart. Nice big size (8") and comes in Spinach/Herb as well as original Flour.1
