Easy Fat Free Chicken Tortilla Soup
Chicken Tortilla/Taco Soup
This makes a lot but I am going to try freezing the leftovers.
The measurements are approximate but there is no way to mess this up!
1/2 Large pot of boiling water
2 or 3 Pieces of skinless boneless chicken breasts (this may still add a gram or two of fat)
1 Tbsp of salt (to taste)
2 Tbsp of cumin (to taste)
2 Tbsp of chili powder (to taste)
OR instead of these spices you can add a taco seasoning packet but it’s usually has unnecessary sodium
Boil until chicken is almost done.
Then add:
1 box of chicken stock (I use free range organic broth)
2 cans of fire roasted diced tomatoes or other stewed dices tomatoes
1 24 oz container of fresh salsa or a jar of regular salsa
1 small can of chopped green chilies
1 can of whole corn kernels (drained)
1 can of black beans (drained)
1 small onion diced
5 or 6 cloves of garlic-chopped or garlic pressed (to taste)
5 or 6 branches of fresh thyme
1 bell pepper (I use 1/2 red and 1/2 red)
1 lime (squeeze juice into the soup)
Bring to a boil then simmer on med low or low for 30 minutes. Break up the meat and take out thyme branches. Taste the soup and add salt or spices as necessary.
Add:
1/2 cup of cilantro (to taste)
OPTIONAL:
Warning!!! These make the soup NOT FAT FREE!
Shredded Mexican cheese blend to taste
Few slices of avocado (healthy fat)
Tbsp of sour cream (if you use fat free, you're still ok here)
Chips (crushed up) or cut up corn tortillas into strips, brush with olive oil and broil until golden brown.

APROXIMATE NUTRITION INFORMATION: (Obtained from MFP) This is with 1.5 breast tenders since that's where the majority of calories come from.
