    eatingwell.com is a great place to look for healthy recipes. One of my favorites is bbq chicken burritos--chicken, black beans, corn, bbq sauce--very tasty.

    What exactly are you looking for? I got a handful. LOL.

    Perfect Pork Chops
     
    For one serving (increase only slightly as you increase number of servings)
     
    1 5 oz. pork chop
    1 tbsp ketchup
    1 small red onion
    1 red delicious apple
    2 tsp brown sugar
     
    Preheat your oven to 350 degrees and line a baking pan with foil (spray with cooking spray to avoid the food sticking). Then take one red onion and one red delicious apple - cut them into slices and line the bottom of the pan. Save a slice of the apple from the pan.

    Take a single serving of 4.9 oz pork chop season to taste with salt and pepper, and then place it in the pan on the onion and apple. Drizzle everything with 1 tbsp of ketchup and 2 tsp of brown sugar.

    Take the extra slice of apple you saved and place on top of the chop and put it in the oven for 35-45 min, or until the chop if 160 in the center.
     
    Parmesan Chicken
     
    For one serving, you'll need:

    1 4 oz skinless chicken breast
    1/3 c parmesan cheese
    1/2 tsp each of rosemary, thyme and marjoram
    salt and pepper to taste
    1/2 tbsp olive oil

    1. Preheat oven to 425, and prepare cookie sheet or pie tin.

    2. In bowl, mix parmesan cheese, and seasonings. Rub olive oil on chicken and then dredge in the cheese mix.

    3. Place chicken on sheet and place on middle oven rack. Cook for 5-7 min on each side or until chicken is starting to brown.

    Sides: 1 pkg of Valutime Chicken flavored rice mix. Follow instructions for low-cal option. This option has you remove the butter/margarine from the recipe and you only use the rice, flavoring and water. 1 serving is only 120 calories.

    Hint - the low cal option is now listed in the choices on my fitness pal.

    1 serving of French cut green beans only 20 cal.

    Total calories is only 380 for the whole meal.
     
    Mini Pizzas
     
    1 Thomas English Muffin (either regular or the Better Alternative)
    1/8 c of Hunt Spaghetti Sauce
    1/8 c of Kraft Non-Fat Shredded Mozzarella Cheese

    1. Preheat oven to 425.

    2. Cut Muffin in half, as normal.

    3. Smear the sauce on muffin and top with cheese.

    4. Place in oven and cook for about 10 min or until cheese is just starting to brown.

    Total calories for this meal (eating both muffin halves) - less than 150.
     
    Homemade Nachos
     
    1 serving Tia Rosa Small White Corn Tortillas (cut into 8ths)
    1/2 c reduced fat shredded cheddar cheese
    2 tbsp La Victoria Cilantro Salsa Mild
    1/4 small avocado
    2 tbsp sliced black olives

    1. Preheat oven to 425. On baking sheet place the pieces of tortillas. Cook tortillas for 10 min or until hard.

    2. Once “chips” are done top with cheese, salsa and olives, then place back into oven until cheese is melted.

    3. Pull nachos out of the oven and place on plate then top with avocado.

    Spaghetti and Ground Turkey Meatballs

    A great tasting low carb and low fat meatballs for spaghetti!

    This recipe is set for serving 4 people.

    There are 448 calories, 52 g carbs, 10 g fat, 36 g protein, 60 g cholesterol, and 695 sodium per serving. Granted, not THE lowest calorie, but it still is good on those days where you are doing really well and have a hankering for Italian.

    Ingredients:
    4 servings of spaghetti noodles
    1 lb ground turkey
    3 tsp Italian seasoning
    1/4 c grated parmesan cheese
    2 tbsp olive oil
    1 can Del Hunt Traditional Spaghetti Sauce

    1. Pre heat oven to 400 degrees then in mixing bowl mix together ground turkey, seasonings, olive oil and parmesan cheese.

    2. Using a scoop, make small to medium size meatballs and place on cookie sheet. Once oven is
    heated, place sheet in oven for 10 min. then turn over the meatballs and cook for another 15
    min.

    3. On stovetop, start cooking the noodles in a medium pot once the water is boiling. Cook
    noodles until they are al dente. In a small saucepot, start cooking the spaghetti sauce on medium
    heat while the noodles and meatballs are still cooking.

    4. Once noodles are done, drain them and place the sauce, meatballs and noodles on counter to serve.
     
    Mozzarella Bake
     
    For 1 serving:
     
    1 cup dry Golden Grain Egg Noodles
    ½ cup Hunt’s Traditional Spaghetti Sauce
    ¼ cup Non-Fat Shredded Mozzarella Cheese
     
    (You can add ground turkey to it if you want meat, but it adds 120 calories for a single serving)
     
    1. Cook the noodles until al dente. While the noodles cook, preheat the oven to 425.
    2. Drain the noodles and in a pie tin, mix the noodles and sauce. Then top with cheese.
    3. Place tin in the oven for 10 min or until cheese is fully melted and just starting to brown.
