I mostly eat chicken. I would love some new recipes to add to my box! What is your favorite recipe with chicken as your main ingredient?

It's cold outside. White chicken chili with beans. Or, you could make chili without the chicken at all, and just use beans (lean protein source).

- Procure boneless, skinless chicken breast in 8oz cuts (usually comes in 3 packs at the store)
- Preheat oven to 375
- Throw breasts on a plate, and season with salt/pepper/onion powder/garlic powder/whatever else
- Non-stick spray/Heat skillet on medium until very hot
- Throw chicken on hot skillet seasoning side down
- Season other side of chicken
- Let chicken cook until outside is deep brown on both sides
- Throw chicken on broiling pan (the one that has the slotted rack on top of the pan)
- Throw in oven for 25 minutes (or until chicken is fully cooked through the thickest part of the breast)
It comes out so moist, and flavorful that you won't ever be able to bake it again without searing it first.0 -
I like to slice it up and cook it with onions and green peppers.. And then I put some cheddar cheese and make a taco out of it There are some 80 cal wheat tortillas that are soo good.0

Butterfly the chicken breast, open it up and spread it with 1-1.5 triangles of laughing cow cheese, layer some ham over it, close it up tightly, dunk in some whisked egg, then roll in seasoned bread crumbs and bake. The laughing cow cheese is sooo creamy. It's a household fav.0

what are you looking for?
Personally, I like to brine chicken in a salt/sugar solution...allows it to retain moisture if grilling.
Personal favourites:
Simple salt grill
Marinade and grill as either a greek skewer or Indonesian satay
cook as part of a taco...so much fresh veggies
Kung Pao...or countless Chinese variations (particularly sichuan)
Basil Chicken or countless thai variations
baked with a slight breadcrumb coating

Heat pan up on stove, spray with cooking spray
Cook chicken with 1/4 c of salsa
Add in corn, peppers, black beans,
Eat in a tortilla or in a bowl0 -
Mmmm all of thise sound delicious! I love chicken. As to the question asked what I am looking for, just about anything on the lower calorie side preferably no more than 2400 calories! Thanks for all the input you all habe wonderful suggestions!0

Chicken curry.
You need cumin, Garam Masala, turmeric, cilantro, black mustard seeds, garlic, ginger and (optional) lime juice... But soooo good. I could eat a ton. Eating a ton is why I had to join mfp.0 -

That does sound good I am going to have to try it!
Eating a ton was never my issue actually my eating habits were never that bad. My issue was depression and my birth control shot....Or at least that is what my doctor told me. I have dealt with the depression, and no longer on BC so I am hoping to get back to a healthy thick size I am used to

Throw a bunch in the slow cooker with some tomatoes, onions, and peppers. Shred. Have chicken tacos for a week.

2 large chicken breast in slices marinated in 4tbsp greek yoghurt, 1 tbsp tikka powder, juice of half lemon and 1/2 tsp salt... barbecue or hot grill... healthy and delicious!0

Fajita chicken (can stir fry onions, bell peppers and chicken with homemade fajita seasonings), stuffed chicken breast with parmesan cheese and mozz cheese with spaghetti sauce on the side, baked cordon blue, chicken broccoli cheese and rice casserole, crockpot sesame chicken, crockpot chicken taco soup (which really is a chili) and one pan stove stop stir fry veggies and chicken breast with parm cheese and rice (this recipe I have is amazing and quick).
I eat chicken every other night so I have to be creative or it can get old. The only thing exceptionally high for the calories per serving is the sesame chicken.0 -
No fancy recipes to offer but options to consider:
Stir fry chicken with mixed frozen veggies
Chicken quesadillas
Chicken tacos
Cut chicken into strips and cook in a hot pan, cover with Frank's redhot sauce and cook until the sauce starts to sorta glaze a little (warning: this is deadly to the sinuses and your wife (if applicable) will complain about the noxious fumes but it's delicious and worth it, especially if you then make a quesadilla out of it)
Fried chicken
Rotisserie chicken

Or watch the Forrest Gump "Shrimp gumbo...shrimp n potatoes etc" scene and replace "shrimp" for "chicken"0 -

Buffalo chicken sliders are a staple of mine. Put chicken breast in the crockpot with Frank's buffalo sauce and a packet of ranch mix. Let cook low and slow for 7-9 hours and then shred it. I usually make sliders but it's awesome in quesadillas, wraps and on top of salad.0 -
