No Flour Pancakes

I got this recipe from a friend. Thought I would share for those trying to cut out stuff like flour.
No – Flour Pancakes
½ cup uncooked old fashioned oatmeal
3 eggs (or just egg whites or combination of yolks and whites)
½ cup fat-free cottage cheese
1/8 tsp vanilla
1/8 tsp cinnamon
1 TBSP olive oil
Directions
Lightly coat a nonstick skillet or griddle with cooking spray; place over medium heat.
In a blender, combine oats, egg whites, cottage cheese, vanilla, and cinnamon. Blend until smooth.
Pour batter, about ¼ cup at a time, onto hot skillet. Cook pancakes until bubbly on top and dry around edges, about 3 minutes. Turn and cook on other side approx. 2 minutes.
Place on plate, top with syrup, yogurt, or fresh fruit.
*Although these have no flour, they look and taste just like four-based pancakes.

Great idea! I also use protein shakes to make my pancakes.
It's great for weight loss or a post workout meal!0 -

oh my thank you! the one thing i REALLY miss are pancakes. i love them so much.
do you have a rough estimate of how many calories per pancake? I know I could just figure it out myself, but I thought I'd ask
thanks!0 -

I have a similar recipe that I use:
1/2 c. Cottage Cheese (I use 2%)
1 c. Oats
2 eggs
1 tsp vanilla
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 banana (optional)
Throw in a food processor, blend and cook on a griddle.
The whole "batch" is 520 calories....so the per pancake count would depend on how many you get out of the batch: I tend to make smaller size pancakes (got 8 the last time I made them) so it came out to 130 for 2.
They are great with fresh berries and a drizzle of honey.0 -

I made these this week for myself as a celebration for being out of school and to avoid starbucks. My son loves these so I made them for him the next morning. I use part skim ricotta instead though.0

Also just smash 1 banana, 1 egg. Pam a pan. "fry" it up till done and top with agave nectar or honey or nothing at all and voila...banana pancake no flour (I am celiac and LOVE these). I will also add a little peanut butter to the mix or top it or top with fruit etc..0
