If a recipe calls for egg substitute, but I want to use real eggs... how do I convert that? Say the recipe calls for 1/2 cup egg substitute... what is that in real eggs?

Generally, 1/4 cup of egg substitute equals one real egg so a half cup would be two real eggs. :)

Yep, that's what I go by(:
  • The thing is that egg substitute isn't really a substitute at all; it's 99% egg whites and 1% WTF?. So if something calls for 1/4 cup of substitute, it's basically calling for 1/4 cup of egg white.

So, if you want to use real eggs instead, yolks and all, I'd say whisk a few together and then measure your 1/4 cup out from the mixture. Then save the rest in the fridge for a couple of days at the most.
