500 calorie dinner?

When I'm stuck and don't know what to eat I usually turn to my egg-rice-risotto-thingy (I know it's a great name)
Ingredients:
Large tomato
Onions
Lean slices of ham
2/3 eggs
Chilli powder - I used mild because I don't want my tongue burned off
Tumeric - 2/3 tablespoons
And 50-60 grams of brown rice
How to cook:
1. Boil the rice and let simmer for approx 25 mins.
2. Dice the onions, tomato & ham
3. Whisk the eggs and spices together
4. Heat a small drop of oil or one cal spray of your choice in frying pan
5. Add the onions and let them sweat for a few mins
6. Add the eggs gently pulling them apart as they cook
7. After the eggs start to cook add the ham & tomato and let it all simmer until the eggs are cooked (should take about 5 mins depending how hot your pan is)
8. Serve and enjoy
When I entered this recipe into MFP is came out just under the 500 calories - it's tasty and has fibre, carbs and protein in it and it's quite easy to make!
Ps if you don't like tomatoes you can switch in peppers or anything else you like in.

Have a salmon fillet with lemon or lime juice and dill, then slap that on a large bed of salad with some low cal salad dressing.0

500 is quite a lot to play with. 4-6 oz of lean chicken or fish, 2/3 cup (cooked) of instant brown rice, and a huge salad with a sensible dressing (lately I've been using a salsa verde on salads). You'll likely be full before you get to 500 calories.0

Anything can be under 500 calories if you size your portion right! Add a salad or veggies to make something that's more calorie-dense (smaller portion) go further.0

I love the Channa Masala Recipe from the Oh She Glows book. It's a really good cookbook for those of you who want to do vegan meals or just want to cut out dairy (I'm lactose intolerant). It comes out to less than 400 calories per serving.
I like eating this with Cauliflower Rice. It's filling and it's doesn't break the caloric bank, if you will.

For 430 calories I make a spicy shirataki mac and cheese with chicken sausage. Two bags shirataki macaroni, 4 wedges of laughing cow cheese, 3 80 calorie chicken sausages, chipotle sauce, garlic powder. Takes 10 minutes.0
