Lunch Ideas

Does anyone have good lunch ideas that fit in the 300-400 calorie range?
Also, how do you prepare your shopping list for the week? It seems like whenever I find healthy recipes they require so many different ingredients. How do you prepare for a week of meals with limited groceries?

I often have a salad topped with a small can of water-packed tuna or salmon, tomato, cucumber, vinegar and a small drizzle of olive oil. Very filling.0

I like making tuna salad sandwiches from tuna (of course. .haha), diced tomatoes, diced bell peppers a tbsp of sweet relish & a tsp yellow mustard on lite whole wheat bread. Then I usually have some cucumbers and/or grapes or other fruit or veggie as a side. But I'm interested to see what ideas everyone else has too because it's easy to get burned out on the same things.0

I got the earth grains whole wheat bread...I really love it. Also buddig roast beef is like 90 calories for like 9-10 slices. I also add a piece of cheese Instead of chips, I have either some chex mix or some cheerios snack mix and a pickle on the side...the wheat bread really keeps me feeling full until supper...hope this helps.0

And to answer your second question, as much as possible I try to make extra servings of dinner and take leftovers for lunch thus cutting back on my list. Or, I'll cut up leftovers of the protein (chicken, steak, etc) and put it over a salad for lunch. My breakfast and snacks are almost always the same thing.0

I make chicken salad from canned white chicken in water and put if over romaine lettuce with raw veggies
I also eat breakfast for lunch: 1 egg, 2 eggwhites, toast, turkey sausage (I stay home with my kids)
You could make a low cal egg salad on wheat bread with popchips
grilled chicken, brown rice, broccoli
