Butternut squash?

I have a butternut squash I have no clue what to do with.

I don't have a blender so soup is not an option. But I would like to eat it as a main dish if possible.

Anyone have recipes or suggestions?

    yes I have a fantastic few ideas... that are yummy... you can cube it and stick it in a microwave or steamer until it gets soft... then get a potato masher and smash it, it gets creamy like potatoes.. you can eat it like that or add a little maple syrup for a bit of sweetness, some people like a little cinnamon in it.. you can also cube it with potatoes, sweet potatoes, carrots, peppers, onions, bit of olive oil and Italian seasoning and bake it in the oven for about 40 mins 375... crispy and yummy.

    one of my favs is also mashed butternut squash, carmelized onions, grilled peppers, lasagne cooked noodles, light cream sauce, or rose sauce, whatever you like... layers with all the above, and I prefer gouda or Havarti ... and bake it according to lasagne noodle recipe and It is toally delicious

    other plan.. thai soup, sauté onions and garlic with a bit of olive oil, then add peppers all different colours, thinly sliced carrots, celery and cubed butternut squash.. add veggie stock my fav or if you prefer chicken stock.. if you are wanting massive pot, add two boxes of stock, and simmer til veg are soft, then add two cans light coconut milk, and juice of one lime, and cilantro ... allow to simmer again.. you can add chicken or shrimp to this, tofu, I don't eat pork or beef, but you could do that too I suppose.. enjoy

    It's also wonderful just roasted, and so simple. Slice off skin and remove seeds and stringy stuff, cut in 1" pieces, brush on a light coating of extra-virgin olive oil, and place on a sheet of parchment paper on a cookie sheet. Then roast at 350 - 375F for 30-45 min. or til lightly browned and soft. It's totally delish with just a little salt, or a few drops of maple syrup or a sprinkle of brown sugar twin.

    I remove the seeds and roast for about 45mins in a medium oven I eat the skin like I would a baked potato. Delicious.

    I just cube it, olive oil, fresh cracked s&p and sometimes some thyme and roast at 425.

    Peeled and roasted or mashed are my ways to enjoy it if I am not going to make soup. An Immersion blender has come to be one of my favorite kitchen gadgets.

    I cut it in half lengthwise, scoop out the seeds, and fill the cavity with a mixture of crumbled cooked sausage, bread crumbs and grated cheese. Spice as desired. Bake in the oven until done. Butternut is more flavourful than pumpkin; a great choice.

    The seeds can be washed, sprinkled with seasoning, and roasted to eat as well.

    I'm eating it right now! I made a chicken curry with cubed butternut squash, cubed chicken, lite coconut milk, curry powder, a can of diced tomatoes, chopped onions and garlic. I would throw in some peas too, but one kid doesn't like them. I've been bringing it to work for lunch, mixed with rice. Browned the chicken, onions and garlic first, then added the rest. There are some great recipes online for this type of curry - mine was really simple, but I'll try something more complex another time.

    I like to buy one with a really long stem and slice it up and make mini pizzas out of that. Here is a visualization of what I'm talking about:

    I put tomato sauce, fresh basil, mozz cheese, and italian chicken sausage on mine.

    Then with the leftover part (the part you can't make circles out of), I just cube and roast it. I have also used this recipe, which is super tasty:

    You can make squash spaghetti. Cut it in half, scoop out the seeds, bake it, and then just use a fork to rake out the insides. Ta da!

    Stuff them!! Ground turkey with thyme, rosemary, garlic, onion, salt, pepper, shredded carrot and diced celery

    I cube the squash, mince 1 large or 2 small cloves of garlic. I add one tsp olive oil and toss all together. I season with a sprinkle of salt and pepper and bake for 30 mins ( i like mine crispy) on 375 degrees.

    I don't think that would work with a butternut squash, but does work with spaghetti squash. I do noodle butternut with my spiralizer, though!

    Just to add the skin is delicious and nutritious!
    I dice mine, roast with chorizo, red onion and herbs, then add feta cheese....SO VERY GOOD!
