    I make tuna melts with avocado on them. Love the smooth, rich texture! Also, you can't go wrong with sushi - avocado rolls are delicious and refreshing. The only challenge is to not eat too many o:)

    I don't really care for mayo, so I use avocado in place of it often - on a turkey sandwich, burger, multi-grain bread with salt/pepper, mixed with tuna, salsa to go with fish etc... I love it!!
    I pureed it with garlic, pine nuts, lemon juice and mixed it with zucchini noodles.

    This sounds fantastic!! If I had a ripe avocado at home now I'd be making this for dinner!

    Ive made this several times and it tastes like banana bread! Mine is never the pretty light green like the one in the picture but definitely still yummy.

And it goes on pasta just as well as on Mexican! I use it on tamales (yuuuuuuum) and penne and grilled chicken and it would probably taste good on fries!

    I also love avocado salad with tomatoes and vinaigrette, avocado toast, avocado omelets. Anything.

    I made an avocado lime dressing the other day. That day I used it on salad and last night, I topped off my chicken breast with it. It's freaking awesome.

    1/2 an avocado
    1/2 cup chopped cilantro (optional)
    1 Tablespoon lime juice
    1/2 cup plain low fat greek yogurt
    1/3 cup water
    1/2 tsp salt
    1/2 Tablespoon garlic
    1/2 Tablespoon cumin

    I love the multi-grain take and bake loaves of bread. I slice it about 1/2 inch thick and toast a slice.
    Wholly guacamole mini's spread on top. So delicious!

    I like it as a base for mousse. I've made lime mousse (avocado, lime and maple syrup) and chocolate mousse (cocoa, avocado, maple syrup, and vanilla). I don't eat this daily, but it's a healthier dessert than traditional mousse.

    - eggs in the morning: Whisk together 3 eggs with salt, chopped chillies, and adobo seasoning. Heat avocado oil in a pan, and cook the eggs for just a few seconds on medium-high eat. Turn off the heat, and fold in half a chopped avocado with lim juice.

    - shrimp avocado salad and lime vinaigrette: Grill shrimp and corn on the grill outside until lightly blackened. In a large bowl, combine shrimp, avocado, cilantro, and corn. For the dressing, combine lime juice, honey, salt, black pepper, avocado oil (olive is great too). Toss with dressing 30 minutes to an hour before serving. Don't let it all soak together for too long in the fridge, because the shrimp and avocado will fall apart :)

    - smashed avocado on ezekiel bread toast with salt, cayenne, and lime.
