low carb peppers

I make meat chili or low sugar mariner sauce and fill a bell pepper then bake for 45-1 hour covered with foil. Remove foil and add cheese. I'm sure it would work for chicken or beef tacos too.

Enchilada Stuffed Peppers are my absolute favorite - low carb. They freeze really well so I can grab one for lunch whenever I want.
I like to use red bell peppers, homemade enchilada sauce, and a little cilantro.
