Quick vegetarian dinner ideas?

I am a vegetarian who eats way too many carbohydrates. I love veggies but I am only good at cooking them if they are frozen. Please help we with ideas for vegetarian dinner ideas using fresh vegetables. Thanks :smile:

    There are more recipes than you can shake a stick at! And lots of really interesting ideas of stuff I would have never thought about before, its a really great resouce for veggies/vegans/healthy eaters
