Boy, was my dinner tonight psychologically satisfying without being too high in calories... 3-cheese pizza for one!

Whole wheat tortilla - 100 cals
Homemade pizza sauce - 40 cals
Part skim grated mozz chees (1/3 cup) - 100 cals
Fat free shredded cheddar (1/4 cup) - 45 cals
2 TBS grated parmigiano reggiano - 40 cals

Cook tortilla in skillet or on microwave griddle to "stiffen"" into a more crustlike state.
Spread on pizza sauce
Spread the three cheeses (mozz first, cheddar second, parm third)
Broil until cheeses are melted and bubbly.

Cut it into wedges, let it cool a little (that cheese gets hot!), and savor every bite!

(I would have taken a photo, but I ate it too fast!!)

i wonder if you you used whole wheat pita bread for your crust it would still taste good...maybe even better? the pita bread i get is Joesph's Whole Wheat Oat Bran Pita Bread and its only 60 calories/pita....that would knock this recipe down to 280 calories!!!

Also works well with Flat Outs. I like to brush with olive oil and do it on the grill to get it nice and crispy.

Pizza without veggies? Naughty, naughty, wrist slap! Just kidding ;)

We're a cheese-hating couple so our pizzas, often on pita bread (easier to handle than too-thin tortillas) are piles of veggies, chicken and sauce.

i just had this today for lunch except i used honey bbq sauce, bell peppers, onions, and a lil bit of sharp cheddar. i was able to have 2 tortilla pizzas for 333 calories! i'm cooking the family chicken pasta tonight for dinner so i'm going to keep some of the chicken for myself so i can have some chicken bbq pizzas tonight.
