Glass noodle recipes?

Anyone know any healthy glass noodle recipes? I am aware they aren't good in carbs, however glass noodle don't spike up the blood sugar, and I can burn it off easily. Just looking for a nice light easy recipe. I saw some I googled but nothing seemed to great.

Otherwise a more traditional thai salad (som tum) with papaya and fish sauce and regular steamed noodles would be healthier

Really though you can take any dish that calls for rice noodles and replace it with glass noodles though.
