So me and my fiance tried meal prepping last week and are continuing this week. Though we were both surprised to see that we actually gained weight this past week. I measured and portioned all of our food. We had one cheat day but we didn't splurge like crazy. Just some BBQ chicken and burgers at a cook out. I was just wondering if anyone gained weight when they first started a new diet?

One week really isn't enough to tell. I'd give it a few weeks before deciding whether or not you need to adjust.
That said, did you use a food scale to portion everything? Did you utilize the recipe builder? You could've just overestimated your portions, which is very common, if you didn't use a food scale.0 -
Did you add exercise too? As long as you are tracking accurately, weigh loss will happen. Weight loss is not linear.0

I did use a food scale and I even measure my fruits, veggies, and nuts. I also measured the meat. This week I used more veggies so hopefully we will see some progress.
We decided we are gonna add more exercise this week. We went for walks last week just for a start0 -

I just finished logging my first week today. I weighed every day and was all over the map. Lost 5 pounds the first day (obviously water, especially since I had been in the mountains that weekend), gained 3 lbs, lost, gained, etc. today I am down 3 pounds, which, assuming 2 lbs of water weight and one of actual weight, is about right. My point is, it takes 2-3 weeks to be able to tell what you are actually losing, because of all the early fluctuations.0

you will bounce all around.. If you weigh and measure everything just stay on track for a few weeks and see. If you still gain cut back your calories a little. I weigh every day but keep a 7 day average of my weight, because as stated you can bounce several pounds each way.0

I will wait two more weeks to see if there is a change. I just find it so weird that eating small amounts of the wrong thing made me lose more weight than the healthy stuff.0

It is quite important that you measure everything. Fruit has a lot of sugar so it can be high on calories. Nuts are very dense and very high on calories too. Make sure you log absolutely everything you put in your mouth. (I'd only skip if I put a leaf of lettuce in my sandwich. I log everything else.)
Apart from this, I agree with everyone here. One week is way too short a time to be able to tell what's going on. Also some scales a weird. For example mine remembers the last value and even though it is supposed to be accurate to 0.1 lbs it never drops before I've lost at least 1lbs.
I'm on 1250 cal/day (I can't exercise due to health issues) and I lose approximately 1lbs per week. This result is on average after 6 weeks. It is not like every week I drop precisely 1lbs. Especially for us women it can be very tricky around our time of month.0 -
You didn't track anything for Friday or Saturday... How do you know how badly you splurged (or not) if you don't track?0

Adding exercise is great! However don't feel like you need to make any changes based on one week. There is a lot of variation when you weigh yourself so look at the tend over a period of time - I recommend six weeks - before you make an assessment about your plan.0
