Today I made my Spicy Pumpkin Muffins:

1 cup old fashioned oatmeal
1 cup King Arthurs white whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp cinnamon
1/2 tsp. ginger
1/4 tsp nutmeg
1/4 tsp ground clove
1 cup Splenda
2 eggs
1/4 cup buckwheat honey
3 T smart balance oil
1/2 cup chopped walnuts
1/2 cup natural apple sauce
1/2 cup pumpkin
1/2 cup mashed sweet potato

Wisk dry ingredients. Wisk wet ingredients. Wisk dry into wet. Bake 20 min. 350 degrees. 1 healthy carb. 1 healthy fat exchange. Enjoy. Linda
