Things to do with zucchini noodles

I've browsed a few sites and have a few recipes saved, but does anyone have any delicious recommendations for me to try with spiralized zucchini and yellow squash? Any tips on how to prepare them so they don't end up like mush? I have a new spiralizer toy for my kitchen and can't wait to use it tonight, but want to make sure I don't ruin my dish with soggy squash.

First, I love my spiralizer! I saw you should squeeze out excess water before sauteeing and I found it only needs a few minutes to heat, so I usually add it last to whatever I am cooking. I found a really good Kale or Avocado pesto....yummy!0

After you spiralize, sautee the zoodles very quickly in a hot pan. Literally just enough to warm them or they get mushy. I like to top with shaved parmesan cheese, peas, basil and a poached egg. The egg yolk is all gooey and delicious like sauce. If I have it I'll add some diced ham or bacon in that sucker.0

Awesome. Squeezing and quickly sautee them up. Check. Other than the egg yolk, that dish sounds good, right there with especially with the ham. I have some ham. I might try have to try that. Thanks!0

If you leave the poached egg off you can always make a quick parm sauce or a pesto instead. I just adore poached eggs.0

Kung pao chicken zoodles comes out really well because the sauce is so thick that the moisture from the zucchini ends up giving it the perfect consistency in the end.0

I prefer to bake them in the oven on 350 degrees
-spread out zoodles on a Pam/olive oil sprayed/ or buttered baking pan
-add whatever spices ; salt/pepper/garlic/onion powder
-a bit of low fat cheese, or low salt marinara sauce for 30 minutes

My favourite recipe to date requires:
1 cup of zucchini noodles
1 cup or fresh spinach
3 to 4 oz of chicken (seasoned with Italian spices)
1/4 cup of feta
1 tsp of fresh garlic
Chilli flakes to taste
First heat up a frying pan(I use a nonstick so I don't have to oil it) and cook up your chicken
Remove the chicken and add in zucchini, spinach garlic and chilli flakes and cook roughly 3 minutes or until the spinach wilts
Throw it on a plate with the chicken and garnish with the feta, voila! If I know I'm going to have a long physical day ahead of me (as a massage therapist) I have this for lunch and throw in 2 or 3 oz of avocado to help tide me over to supper0
