Cooking myself thin day 1

Yesterday I decided to start cooking my healthy recipes and really never eating junk again. I made a recipe that won me a ribbon at the Wisconsin State Fair in 2009. It is easy, tasty and healthy. I have more complicated recipes but sometimes simple is good.
Orange Dreamsicle cheesecake
Spray a spring form pan with cooking spray and spread 1/4 cup graham cracker crumbs or chopped walnuts in the bottom of the pan for a crust.
Process 5 cups of fat free cottage cheese smooth in the food processor
Dissolve 2 packages of sugar free gelatin in 1/2 cup boiling water. Add to the cheese and process smooth.
Pour 1/2 the cheese mixture on top of the "crust"
Drain a 15 oz. can of mandarin oranges and place them on top of the cheese mixture.
Pour the other half of the cheese on top of the oranges.
Drain a second can of mandarin oranges and place them on top of the cheese mixture.
Refrigerate until firm...usually overnight.
