I love to cook and love to talk about cooking. So, as I am getting dinner ready tongiht, I wonder what other people are eating while on this journey.

Tonight for my family it is:

Homemade Chicken Parm Sandwiches (buns and sauce homemade as well...) (mine will be open faced)
Roasted Potato Wedges
Baby Romaine Salad with Lemon Vinaigrette

    We had burritos made with super lean beef, low fat low carb tortillas, fat free beans, low sodium seasoning and 2% mexican cheese... I love my mexican food... lol

    Tonight was easy for us! We opened up a bag of Garlic chicken voila and added some whole baby carrots on the side. Also had a small piece of rye bread with a little margarine. It was simple but tasty.

  • Spinach, tomato, garlic and a light sprinkle of cheese on a pita. Totally had a pizza craving!! :wink:

    For dinner:

    Fresh veggies (carrots,. broco, cauli,)

    Brown rice (with seasonings like pepper, garlic, etc.)

    Spring Mix Salad

    Salsa and chips on the side (maybe)

    Might role it up in a wrap to make a burrito. Wish we had beans :)

    Zucchini and tomato stew cooked in the crock pot...

    Ingrediens: 1 large zucchini diced; 1 large vidalia onion, diced; 1 large tomato, diced, 1 can low sodium kidney beans; 2 cups diced fresh green beans; 1 small can low sodium tomato paste; 2 cups unsalted vegetable broth.

    Combine it all in a big stock pot, fill with water, cook on medium-high or 2 hours or you can also cook this in a crock pot (4 hours on high, 8 hours on low). Serve hot.

    Approx. 150 calories per large bowl.

    We usually eat it with some fresh homemade wheat bread or as an appetizer for a larger dinner.

    You can also throw in seafood (clams, shrimp, scallops) (put this in the last 30 mins of cooking only), beef, chicken breast, ground turkey (put these in at the beginning of your cooking).

    -- EDIT: Turns out soup won't be done in time. We did chicken wraps instead.

    We had the same!! So simple but good :) Seasoned the chicken with lemon and Mrs. Dash...yummy!

    My family ate subs...ham, pepperoni and cheese...but I made a salad and just put one slice of pepperoni and one slice of cheese on it with croutons and bacon bits. For dressing I sprinkled oregano, garlic and olive oil on top...yummmmmmmmmmm! :tongue:

    Tonight we had baked potatoes and peas......the family had beef steak and I had a maple chili tofu steak.

    It turned out really nice. The recipe for chicken breasts but all I had were tenderloins, which worked just as well :) The sodium seems high but I'm still new to all the label reading lol.
