Welcome to the thirty-fifth round of the cooking challenge! This week's ingredient comes to us from arwensb, the winner of the lemon cooking challenge.
This week's challenge is ZUCCHINI.
Any entries from prior cooking challenges may not be reused.
These are the rules for the challenge:
1. You don't need to have created the recipe from scratch, but you DO need to make it.
2. Voting will be put up for the challenge and the winner of the challenge will pick the next ingredient to be used.
3. Pictures are encouraged but not required. If you want to post a picture upload it on a website like photobucket.com or tinypic.com . If there's any questions about how to do that, don't be shy to ask me.

BAKED STUFFED ZUCCHINI BOATS
Number of servings - 6
Serves people - 6
Ingredients:
Chopped Onion, 1/2 cup
Shady Brook Farms Ground Turkey 93/7 - Italian Style, 6 oz
Stove Top Stuffing Chicken Low Sodium (No Butter) - Stuffing Mix, 1/2 Cup (we use generic or make own for < cals/sodium)
Fresh Sweet Red Bell Pepper, 1/4 Cup (75g)
Sunny Acres - Swiss Slices (Cheese), 3 slice
Zucchini, 3 - Raw/ Fresh/ Medium, - approx 250g ea. to 8 oz. ea.
Tomato, Roma - Fresh Sliced or Diced Roma Tomatoes, 1.5 Cup
DIRECTIONS:
Saute onions and red pepper in pan sprayed with Pam til translucent
Add turkey and brown
Mix: turkey mixture with stuffing
Prick insides of zucchini with fork (allows flavors/juices to meld in zucchini)
Place turkey/stuffing mix in center of scooped out zucchini 'boats'
Top with sliced tomatoes ( May add diced tomatoes to mixture instead - your preference)
Cover with foil
Bake 350 -375 degree oven approx.30-40 min (fork test zucchini for tenderness)
Remove foil
Top with Swiss cheese and broil 5 mins or til melted.

These are versatile because you can adjust stuffing/filling to your own taste.
Sometimes put fruit or craisins in stuffing,
Sometimes do with mashed potato or cauliflower mixture.
Be creative!
For kids we make carrot stick masts with cheese slice sails...The kids love their Boats!0 -

Turkey Zucchini Chili:
1 pound of ground turkey
1 onion (large)
1 large zucchini
1 can of tomatoes (I used fire roasted)
1 can of black beans
1 can of garbanzo beans
1 can of kidney beans (I used the "spicy" kind)
1 tbs chili powder [this makes it a little spicy so decrease the amount to taste]
1 tbs cumin
Brown the turkey. Dice the onions and zucchini and add to the turkey. Cook for about 5 minutes or until they reach a texture you like. Add cans of tomatoes, garbanzo beans, kidney beans and black beans. Mix in spices. Add water to reach desired consistency (I put about 4 cups) You can add salt and pepper to taste. Simmer as long as you like or eat when hot!
Serves 8 and the calorie count was 268.
I totally made this recipe up on the fly last night . I thought it was pretty good, a substantial portion and quite filling.0 -
MOCK APPLE PIE
1 recipe pastry for a 9 inch double crust pie
2 large zucchini
2 tablespoons lemon juice
1 pinch salt
1 1/4 cups packed brown sugar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons cream of tartar
1 pinch ground nutmeg
3 tablespoons all-purpose flour
Peel the zucchini. Cut into quarters lengthwise, then remove seeds and cut crosswise (as you would cut apples for apple pie). Toss together 4 cups chopped zucchini, lemon juice and salt. Place mixture into frying pan and cook until tender-crisp.
In a separate bowl, mix together the brown sugar, cinnamon, cream of tartar, nutmeg and flour. Add the cooked zucchini to sugar mixture and mix well. Place filling into a 9 inch pie crust, dot with butter, and place top crust on. Bake in oven at 400F degrees for 40 minutes or until golden brown
Serves 8 and it's 269 calories per serving.
I've fooled tons of folk with this. No one will believe you when you tell them it was made with zucchini! You can slice the zucchini to look like apples or cube them. It really doesn't matter. Just make sure they're soft when you've cooked them. You can substitute some but not all of the brown sugar with a Splenda or some version of it. You can use light butter in it to lower the calories and you can also use crushed lowfat graham crackers as a crust to lower the calories/fat. Great way to get in your veggies!0 -
Chocolate Zucchini Bread (Allrecipes.com)
Ingredients
2 (1 ounce) squares unsweetened chocolate
3 eggs
2 cups white sugar
1 cup vegetable oil
2 cups grated zucchini
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup semisweet chocolate chips
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
2.In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans.
3.Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
20 Servings

DELICIOUS!!! But it has chocolate in it so it kind of has to be right. Not the healthiest zucchini recipe I have but my favorite0 -
Granny's Zucchini and Squash Pasta
Makes 10 Servings
1 Large Zucchini
1 Large Yellow squash
2 tbsp olive oil
1 box or half box Grape tomatoes
2 cups Whole wheat penne pasta
1 Clove of garlic
1/2 cup Italian blend shredded cheese
Seasoning:
Italian seasoning
Garlic powder
Onion powder
Black pepper
Chop up the zucchini and yellow squash into cubes. Dice the garlic. Cook the pasta, and saute the zucchini, squash and garlic together in another pan with the olive oil until the zucchini and squash are soft. Turn down the heat and add the grape tomatoes with the zucchini, squash and garlic, and add the seasoning (as much as you want). Put a lid on the pan so for a couple of minutes for the tomatoes to cook. In a bowl, combine the pasta, cheese, and vegetables (with the oil from the pan).
You can add more or less of any ingredient to suit your taste. I love garlic and I like my pasta dishes to be hearty so you might wanna add less in this case. I also don't add any salt to my food so you can add a little if you like. My grandmother made this dish for us a couple of years back. It's 74 calories per serving.0 -

I'm not sure what to make of this - it almost seems criminal not to have delicious beautiful apples (I'm English, we love our apples) in an apple pie, but at the same time I'm intrigued by it!!!
personally I love stuffed zucchinis (courgettes) and peppers. I have some long sweet peppers I want to stuff so may use the stuffed recipe here for it. Yum.0 -
