What are your thoughts on intermittent fasting but not having the time to workout while fasted; is that the whole point of it? I gave up on basically skipping breakfast & having an apple for lunch because my body wasn't feeling it. What are the benefits of "IF" apposed to just watching the calories and staying at a caloric deficit?

There is no weight-based, real world benefit other than what you mention. It's just a technique that some people find useful for keeping their calories low. Some will say that the fact that it aids insulin resistance means easier weight loss, but the difference there is negligible.
There have been correlations suggested between IF and reduced cancer, heart disease, and other health benefits, but AFAIK the jury's still out on that.0 -
I normally do 16:8 and low carb together. It only helps me with calorie deficit. I love it0
