I changed the way I thought to really get going

Reset your thinking. I had to tell myself that I needed to become a new person - somebody who eats and acts to maintain 145 lbs rather than somebody who eats and acts to maintain 200. Forever. This is not a temporary "diet." This is how I will be, from now on. No turning back.
Look at somebody who is at your goal. How much do they move? How do they eat? How do they maintain it? Am I currently acting/eating like them? Nutritionists have been telling us to eat more vegetables all along. Vegetables are so much less calorie-dense than beef. People who eat mostly vegetables are not heavy. I keep telling myself this.
It's not easy to eat clean, but start by making small changes. Make one big batch of a low calorie meal and enjoy the leftovers for a few meals while you look up and shop for ingredients for your next clean meal batch. Here's a meal I've used for a few weeks now that I find hard to eat too much of: Lentil dal. Serve it over cauliflower rice instead of white rice. Plenty of protein and the fiber is much appreciated (if you know what I mean!)
