New Quinoa Noodle recipe

So I was introduced to a Quinoa/Brown rice noodle this weekend by a vegan friend. Now I'm not vegan but these noodle are good so I made the following.
8 cups dry noodle
5 chicken Asiago spinach sausages
2 cups Mushrooms
2 roasted red bell peppers
2 cups chopped broccoli
1 cup diced tomatoes
1/4 cup tomato paste
2 tablespoons extra virgin olive oil
2 tablespoons low sodium soy sauce
2 tablespoons of garlic powder
I roasted the bell pepper first so I could cut it up for prep.
Then as the noodles were cooking I sautéed the mushrooms in the oil and soy sauce with a little ground pepper. Once they were cooked down I added the roasted bell pepper, chopped broccoli, chicken sausage sliced up thinly, the tomato paste, and diced tomato and let this all summer and come together.
Once all of this has simmered together for about 10 minutes I mix this with the drained and cooked noodles in a bowl. I then add the garlic with powder to taste and mix it all together.
When I made this it made 10 cups worth of food at 288 calories for each cup. The family ate this up and loved it.
I would add fresh garlic but I did not have any.
