    Lunch: Kale/Lettuce, tuna with mayo, and shredded cheese
    Dinner: 2 eggs over easy with roasted diced tomato and melted cheese

    Roasted chicken breast (bones in and skin on), roasted potatoes, roasted veg (brussels sprouts + cauliflower are a nice pairing with this).

    Pork chop (I like to start on high heat on the stove and then finish in the oven) + roasted sweet potatoes or winter squash or a mix of root veg like turnips, carrots, parsnips + sauteed green beans with maybe some sauteed greens (chard is good). This is even better if you cook some apple with sauerkraut and maybe some onions and add that to the plate. I might do that instead of the sweet potatoes/squash/root veg.

    Both good cold weather/comfort dinners I default to quite often.

    Cauliflower crumbles. Buy them or just pulse cauliflower in a food processor, mixed with a spoon of salsa and sautéed until softened. Mix with grilled chicken, plain Greek yogurt and a little extra salsa and avocado if you wish.

    Roast chicken thigh or pork chop and a vegetable.

    Carolina-style pulled pork, a sweet potato, and a poached egg.

    The pulled pork has a few too many ingredients, granted, but one batch makes many, many servings.

    Tofu, furikake, ponzu sauce

    Boiled eggs, vegetable, protein

    Greek yogurt, marmalade, stevia, fruit

    Banana, oatmeal, cinnamon, stevia -bake it

    Coco wheats, whey, pb2, almond milk

    Zucchini noodles, jar tomato sauce, cheese, protein

    Eggs, American cheese, ham, toast.

    When I tell people I only know how to prepare food for 1 person I mean it lol.

    Cut up zucchini, stewed tomatoes, onions, tomato sauce all cooked together and served over brown rice

    Tortilla shell or wrap
    Tomatoes, onions, mushrooms
    Cheese
    Any protein (chicken etc)
    Assemble and microwave or cook In toaster oven

    Chicken breasts
    Onions
    Baby carrots
    Stewed tomatoes
    Mushrooms
    Cut up potato
    Put all in crockpot
    Add a can of chicken broth
    Cook on low 6 hours

    Rosemary roasted chicken and veg.
    Diced or whole chicken breast on one side of the pan, cubed red potato and sliced carrots on the other. Toss in a small amount of olive oil and sprinkle liberally with rosemary and fresh ground pepper. Bake at 425 for 40-50 minutes, turn halfway through.
