Tips for salvaging overcooked pork?

I had to leave the house for an emergency yesterday and asked my neighbor to turn off and take the food out of my crock pot. The cook time was 8-10 hours and I had her take it out at the 8 hour mark. Never-the-less, it tastes awfully overdone to me. This was for pork carnitas - any ideas on how to salvage it? I hadn't planned on smothering it with cheese and sour cream, but maybe this will help?

    Add some BBQ sauce for pulled pork sandwiches.

    Can I ask what cut was used...

    Jus a note, if you are cooking with a very lean piece like a loin, do not cut it into small chunks. I did a 4 hour braise Balinese pork loin...as an experiment, I cut one loin into bit sized chunks and cut the other into thirds...the bite sized were "overdone" ...the thirds was perfect when pulled apart with a fork.

    I routinely cook a pork shoulder in a crock pot, on low, for 8-10 hours, and it's perfect for carnitas.

    It says Chef's Prime Pork Roast. I assumed that meant not loin, but perhaps I was wrong. I just looked for the nutrition info on the label but unfortunately the values were not filled in.

    The recipe called for butt roast.

    Is it the flavour or the texture that's getting you? If the former I'd probably mix it with some tomato sauce and more spices, if the latter I'd reheat it with some chicken stock to moisten it up.
