Thoughts on the taste, texture, etc? I want to try it, but I've heard mixed reviews on it.

I love it. I typically cook it up like other greens. I hear it makes good chips too.

I think it's awesome and hearty. I never ate it much but one night I made a ton of Kale chips and ate them all. They were delicious but I woke up with an itchy throat. I ate it again for lunch and it got worse so...no kale for me. In small doses it's fine. I really do like it though.

It's important to get kale that is not old and tough. Avoid the bags of pre-chopped kale. I grow it - am going to be looking for it at the garden center today. Outside growing season, I buy baby kale.

    I normally grow scotch kale

But am going to try lacinato / dinosaur kale this year as well.

I like to have it every so often. IMO there's a big difference in taste depending on the variety you get. I don't care much for the curly or red kinds. Lacinato/tuscan/dino kale is the best! I like to slice it into tiny strips and make a salad. Sauteed in butter or with bacon is yummy too.

Here are some recipes. I haven't tried the first two. I've made variations of the soups:

I make this a lot. I add canned salmon or tuna: http://cooking.nytimes.com/recipes/1015085-pasta-with-anchovies-garlic-chiles-and-kale

I make kale salad with tender leaves. I add oil & vinegar, garlic powder and celery salt, and let it marinate for a bit. I like grated carrots, sharp cheddar, and canned salmon or tuna.

There are some lovely recipes for kale and white beans online, and kale chips of all kinds are delicious. Sometimes I put kale in smoothies, but the texture is tougher and the flavor stronger than spinach, which I find nicer in smoothies. If you can grow kale in your own garden, baby kale leaves are much more tender and delicious than the big, tough ones you find in most grocery stores.

I like baby super greens mix in smoothies - baby kale, spinach, swiss chard. Hopefully, I'll be getting them all from the garden in about a month.

I purchased a bunch of kale several days ago. First, I tried it raw. Chopped up raw and mixed with my breakfast worked pretty well. That is, I saute onions and celery for several minutes then add 2 links of breakfast sausage and then add an egg. All that mixed with a single leaf of raw chopped Kale worked pretty well. After that I tried the Bobby Flay recipe for saute'ed Kale which involves olive oil, water or broth, garlic, kale, salt, and pepper. I omitted the salt and chose the water. I was guessing at the proportions of stuff but the thing that really made it delicious (in my opinion) was the act of crushing the fresh garlic before adding it to the olive oil.

I juice Kale, then blend some of the pulp back in and mix it with greek yogurt, cottage cheese, fruits and stuff.

Bagged kale is very dry and hard too swallow lol. If it's crash it's not bad. I started juicing it but now can eat it. Its a lot better than some spring mixxes or iceberg lettuce

Good flavor and when cooked, doesn't turn into the consistency of snot, like spinach. Raw in salads or cooked witt onion and garic.
