High protein low carb vegetarian

    Do you eat meat substitutes? If so, you can cook just about any low carb meal and sub in a substitute meat for the real thing. You can also just do an equivalent of "meat and 3 veg" but avoid high carb veggies like potato.

    Right now I'm eating Taco Soup from Budget Bytes, but with Quorn mince instead of actual beef. Removing the corn and using only one can of beans would help lower the carb count. My version is 221 cals a serve with 28gms carbs, 3 gms fat and 16gms protein. I added some cheese to it for extra protein.

    Do you eat eggs? If so, you can do things like spinach and mushroom omelettes or crustless quiches. My version of SkinnyTaste's Crustless Spinach and Feta Pie has 120 cals a serve with 11gms carbs, 8gms fat and 8gms of protein. It's more of a lunch thing to me, for dinner I'd probably serve it with a salad.

    Baked eggplant parm with panko breadcrumbs. Tofu lettuce wraps. Refried bean tostada. Stuffed portabella mushroom caps.

    marinara sauce
    (If you eat dairy- ricotta cheese, one egg, spices, mix then stuff in pepper, mozerella on top)
