My sweet potato curry boats

Roasted halved sweet potatoes cooked in the oven with salt and pepper. Poked and washed well.
When done take out the soft centre and hollow out.. Shred chicken.. 2 ouncers per each 'boat'.. Mix 2 scallions.. Salt..curry powder and the mashed sweet potato. Mix. Put into hollows. Yummy! Going to play around more with this recipe.. I think some franks red hot sauce mixed in would be just perfect.

Great idea!! I think I will do the same next time. Really good plain also though. I have leftovers for 3 meals woot lol.0
