Eating according to weight loss plan- exercising 5x/wk and exceeding my 12k step goal everyday , logging all my food and a week later the scale is going up! WTF???

You have to give it more than a week to get a good picture of what's going on. Keep at it for 4-6 weeks and then evaluate your plan to see if it's working for you.1

If all this activity is new to your body, your muscles will be retaining water to repair themselves. This will mask any weight loss and could show an increase on the scale. Take a deep breath. Be patient. And, check out this awesome chart by @lemonlionheart to double-check your work.

well you could be eating more than you think...based on your diary you don't use a food scale.

water/fluid retention from new exercise.
Give it some time but I suspect you are eating too much. Normally the first week is a good loss.0 -
I have been exercising 4x a week for well.over a year.... I.weigh and measure everything and this plan is from a very reputable gym. I am also hungry on it all the time. ..I just don't get it.0

I notice you are measuring with cups and spoons and logging "generic" entries. Start weighing your food in grams. You are probably consuming more calories than you think.0

you don't...you weight xx grams if it's a solid and use measuring cups for liquids
For example half a cup of oatmeal? is that cooked or raw? and that should be weighed.
and 6oz grilled pork chop? what kind? if it is centre loin bone in it's 355 calories not 195 if it's just pork loin grilled it's 294 calories for 6 oz which btw is 170 grams. You have it logged at 1950 -
