how to determine nutrition info when cooking

Hello I am pan-frying pacific whiting fish in coconut oil. Does anyone have any first-hand knowledge and can suggest how to determine the nutrition information once cooked? Thank you!

Weigh and log the fish. Weigh and log the coconut oil. You won't use all the oil as some will be left in the pan but it's near impossible to determine how much the fish actually absorbed. So to be ultra conservative count it all.1
