    Yum, never thought to roll my fruit around in coconut, but that would make a perfect dessert!!!

    my favorite go to easy is sliced ciabatta or sourdough... toasted in a cast iron with a tiny bit of butter. I spread avocado then top with tomatoes and good parm... put it under the broiler to get the cheese bubbly. I then take arugula and toss it in olive oil and balsamic vinegar and top the toast with that. We eat it like everyday its so good.

    Yum! Although I must admit I don't buy bread very often because it goes stale before I finish it.

    Here's another go-to snack for me: Ryvita Multigrain Crackers topped with almond butter, blueberries, almond and coconut - any fruit and nut butter on these crackers is amazing!
