How would you calculate this, since a lot of the marinade falls off.

I usually just create the recipe for the marinade and then once I go to cook the food-stuff, just measure what is left of the marinade and subtract to get the portion that was used.1

Man, thats actually a tough question! hahaha. I agree with msheepy about measuring what is left afterward or as I often use really low cal marinate (italian dressing, balsamic vinegar) I just use a rough estimate. Orrrr I cook down the marinade with or after the meat and serve it as a sauce on the side therefore using almost all of it
