Sauteed Veggie Hummus Wrap

I love these Hummus Wraps, inspired by something I saw at http://sabra.com/recipes/Grilled-Veggie-Hummus-Wrap.

Ingredients:
1 wrap La Tortilla Factory - Smart & Delicious Soft Wraps Multigrain W/ Extra Virgin Olive Oil
2 tbsp Sabra - Hummus Roasted Red Pepper
1 cup Spinach - Raw
1 Zucchini
1 Yellow Squash
1 tbsp Olive Oil
1/2 Red Bell Pepper
1/4 tsp Badia - Adobo Seasoning

Directions:
1. Preheat saute pan and 1 tsp olive oil to medium high heat.
2. Chop the zucchini, squash, and pepper. Add to heated saute pan.
3. Sprinkle with Adobo seasoning. Cook 5-10 min.
4. While the veggies cook: on top of a wrap, spread 2 tbsp of hummus followed by a layer of raw spinach leaves.
5. Spread cooked veggies on top of the spinach.
6. Roll the wrap carefully then slice in half on a diagonal.

Per Serving: 247 calories, 30 carbs, 10 g fat, and 12 g protein

    That sounds REALLY good and I just made a big batch of roasted red pepper hummus... I'd call that fate :)

    Aww, man, Sabra hummus is the worst. :/ Maybe it is just my tastebuds. I like Emerald Valley or Athenos SO much better. Thanks for a yummy recipe!
  • Definitely use the hummus you like best :)

    I'm a huge fan of Sabra's flavor, especially the roasted pine nut.
